I Did It! I Made A Turkey!!

I made a Turkey! It was my first attempt at a Turkey and I was certain I was going to fail. Everyone told me that my first turkey would probably come out very dry, so I was prepared to fail from the beginning. I used a Kikkoman Soy Brine…yes I did say Kikkoman! Apparently it’s used for much more than we ever thought! I used a garbage sack for my bird and brine and tied it up and placed it into the refrigerator. I soaked it for just over 24 hours which was double the recommended time, but I figured it would just trap in the flavor a little more…it sure did!

Because of the soy, I thought that I may have to cover it with foil to keep from burning the outside, but it turns out I didn’t have to. It came out beautifully brown all on it’s own. As I said earlier, many had told me that it was going to come out dry, so I was determined that my bird was going to be juicy, regardless of the fact that it was my first attempt. I used a little bit of chicken stock to baste it for the first 2 hours, as it wasn’t making enough juices on it’s own. I basted the turkey every 20 minutes until it was cooked. It came out moist, yummy, beautiful and perfect! Here’s a pic of my bird right before I pulled it out of the oven..what do you think?

The flavor from the Kikkoman soy brine was truly unique and so yummy! Everyone raved about how well the turkey came out and how much flavor it had! I was literally jumping up and down, in my kitchen singing a made up bird song! You must try this recipe! Here’s the Kikkoman Soy Brine Recipe so you can try it for yourself:

Kikkoman Savory Turkey Brine Recipe:
(Recipe for a 16-24 pound turkey)

2 gallons Cold Water
10 oz. Kikkoman Naturally Brewed Soy Sauce
1/2 cup Kosher Salt
1/2 cup Sugar
2 Tbsp. dried sage
2 Tbsp. dried celery seed
1 Tbsp. dried thyme

The night before roasting, remove giblets and turkey neck; rinse turkey inside and out. In a large stockpot, or 5-gallon bucket, mix water with remaining ingredients. Stir well until all the salt is dissolved. Place turkey in a pot, cover with a lid and refrigerate overnight, or at least 8 hours. Remove turkey from brine, rinse well. Follow your regular cooking instructions.
