After spending a week on vacation and eating “what was around”, the four of us came home and wanted nothing more than a bowl full of corn and broccoli! Healthy and simple foods not only keep our waist line where it should be, but also provide the nutrients that our family needs. Truth be told, we are a “hit or miss” family when it comes to our eating habits. Our intentions are always good, however we could use a little strict discipline when it comes to eating healthy and simple each and every day.
Now that vacation has come and gone, it is our goal to eat ONLY healthy and simple foods. Every.Day. Yes, I did say “goal”!
Thanks to my Mother-in-Law I now know how to steam broccoli (go ahead, laugh, it’s ok). I have a reputation of burning water, and many other things for that matter. I have been ok with it, thus far, however it’s time for us to shape up not only for our sakes, but for our children. So we decided that once vacation was behind us, we would only bring foods and snacks into our house that are healthy and good for us. Apples, bananas, vegetables, and others are on the list, as well as a new, and not so likely character by the name of Old London Melba Snacks.
Where is Old London and What is a Melba Snack?
Have you ever grabbed a box of party mix and completely ignored the pretzels, along with those little round hard things, and the Chex, only to find yourself eating each and every one of the hard little toasts? Ok, well maybe it’s just me. Old London makes those yummy little Melba Toasts, among other snacks, and it wasn’t until recently that I learned just how healthy these yummy little treats were!
Old London snacks are made with all-natural ingredients and whole grains, and can be a healthy snack when paired with other light ingredients, such as low-fat cheese, salsa or even turkey. Old London products include Melba Snacks (try the Spicy Cheddar…yummmm!), Melba Toast, JJFlats Flatbreads, and Bagel Chips. Each serving is just 60 calories and 0g of Trans Fat. Multiple flavor combinations are available and after receiving a few boxes to try out, we are now big fans!

Old London snacks and toasts are not only yummy as a snack, but you can also incorporate these healthy and tasty treats right into your meals. See below for a yummy Banana Melba Pineapple Upsidedown “Cake” recipe!
Banana Melba Pineapple Upsidedown “Cake” Recipe
– 2 Boxes of Old London Melba Toast Classic
– 1/4 cup butter, melted
– 1/2 cup packed dark brown sugar
– 1 cup of canned pineapple juice, chilled
– 1 tablespoon of corn starch
– 2 8-oz. cans of crushed pineapple drained
– 2 medium ripe bananas, sliced thin
– 8 Maraschino cherries
– Cooking spray
Directions:
1. Preheat oven to 350 F.
2. In a small bowl, mix corn starch with chilled pineapple juice.
3. Add sugar and melted butter and mix thoroughly.
4. Cover a large loaf pan with aluminum foil and spray with cooking spray.
5. Place maraschino cherries at bottom of pan.
6. In alternating layers starting with the pineapple, layer Melba toast, pineapple, and bananas in loaf pan.
7. Press gently, and then pour over the pineapple juice mixture.
8. Bake in the oven for 30 minutes.
