Easy Chicken Bake Recipe Using Stove Top Everyday Stuffing Mix!

If you have been a long time reader here, then you are fully aware that I am not very..er…domestic. Let it be said that I recently learned that I can cook, however the words “cook” and “enjoy” rarely fall into the same sentence. In fact, I’ve been known to prove that pizza is healthy (yes, I found out a way to fool my husband into believing this), in an effort to avoid cooking on any given night. Honestly, I’m not sure what it is about cooking that I dislike, but perhaps the preparation involved to make something that’s gone in a matter of minutes…irks me. My idea of a good recipe is six ingredients or less and no more than 10 minutes.

Anyone feeling me on this?

We have loved Stove Top stuffing for a very long time now. You know the one that you just toss in the pan, add a little water and suddenly you have an instant side dish? Yea, that one. The only problem with this however, is that we always had left overs and although I have the best intentions, those left overs end up in the trash a week later. Stove Top must have taken note of my “leftover” issues and has recently introduced Stove Top Everyday, a new formula that has the same great taste of flavorful herbs and spices, but comes in a re-sealable canister allowing you to make as much or as little as you want in only 2 minutes! In comes in a cute little canister and you just cook as much as you like.

Can you say “undomestic diva bliss”?

To top it off I decided to visit the Stove Top website and get a few quick and easy meal ideas and I stumbled up on this one…

Easy Chicken Bake

Prep Time: 10 min
Total Time: 40 min
Makes: 6 servings

– 1 pkg (6 oz) Stove Top Stuffing Mix for Chicken
– 1-1/2 lb boneless skinless chicken breasts, cut into 1-inch pieces
– 1 can (10-3/4 oz) condensed cream of chicken soup
– 1/3 cup Breakstone’s or Knudsen Sour Cream
– 1 bag (16 oz) frozen mixed vegetables, thawed, drained

Directions:
Preheat oven to 400°F. Prepare stuffing mix as directed on package; set aside.
Mix chicken, soup, sour cream and vegetables in 13×9-inch baking dish; top with the stuffing.
Bake 30 min or until chicken is cooked through.

Simple Translation: Toss the stuff in the pan and eat it a little while later – honey, dinner is served!

This recipe is easy-peezey-lemon-squeezy and I didn’t have to think about it, because all of the ingredients I had on hand. Thank You Stove Top for catering to the undomesticated diva in us all!

You had me at “10 min prep time” – This looks delish! I often cook up chicken breasts, cut them into strips, and freeze them so I can throw together last minute meals. I’ll definitely need to add this one to my list.

I have tried the recipe, and I love it. It’s a good way to get in some vegetables, and the Stove Top adds a very nice finish to the dish.
