Boneless Pork Chops with Apple-Balsamic Glaze Recipe + #Win a $25 Costco Gift Card!

Last week I shared an awesome-sauce deal on pork from Costco with you, where until August 9th you can get $2.50 off boneless pork chops or roast! I also told you that I had found an amazing recipe that would get your kids to eat pork, and that we would be giving away a $25 Costco gift card to one lucky DM reader…well, the time has come!

But, first…the kid-friendly pork recipe that is easy enough for any night of the week.

Boneless Pork Chops with Apple-Balsamic Glaze Recipe

Ingredients:

– 4 Boneless Pork Chops
– 1/3 cup chicken broth
– 1/4 cup balsamic vinegar
– 1/4 cup of apple jelly
– 1 tbsp. butter
– 3.4 tsp. dried Italian seasoning
– 3.4 tsp. garlic powder
– 1/4 tsp. pepper
– 1/2 tsp. onion powder
– 1 tbsp. olive oil
– 1 1/4 cup apples, peeled and finely diced
– 4 cups of fresh greens or spinach

Directions:

Stir together apple jelly, vinegar and broth. In the meantime, saute apples in butter over medium heat for 6 minutes. Add jelly mixture to apples and reduce by half.

In a medium bowl, combine onion powder, seasoning salt, pepper, Italian seasoning and garlic powder. Rub on pork chops. In a large skillet, heat oil on medium heat and cook chops approx. 7 minutes, turning only once. Place pork on a bed of fresh greens or spinach and top with apple-balsamic glaze.

New Temperature Guidelines
As a reminder, the USDA recently reduced the temperature guideline for pork loins, chops and roasts from 160 to 145 degrees F, with a three minute rest. This will yield a juicy, flavorful product that may be pinker in color than most home cooks are used to. Ground pork, like all ground meat, should be cooked to 160 degrees.     We eat pork about 2 times a week. Favorites in my house include slow cooker barbecue pork, Carolina pulled pork and carnitas. Growing up, we only rarely ate pork and only in chop form. I had no idea what I was missing! Now that I’m the mom, I cook it all the time.

    I love my pork slow cooked and I have many recipes. Pulled pork, adobo, roast, kahlua pork, carnitas and more. So amazing and delicious!

    We eat pork one day a week. I prepare it with a marinate and then put it on the stove top to brown then put it in the convection oven. This keeps it so moist.

    My family eats pork, the other white meat once a week. We will marinade a pork lion in rosemary, olive oil, garlic, salt and pepper and a splash of beer in a ziplock bag for a hour. Then pan sear the outsides and place in the oven on a roasting pan for an hour to an hour and a half. Then let it sit for 10 mins.

    We eat pork a few times a month, sometimes more, sometimes less. In the fall & winter I love to split a pork loin, stuff it with something yummy (apples with rosemary most recently), and roast it.

    We eat port approximately two times a month. Pork chops are a favorite, cooked with onions in a fry pan with side of mashed potatoes of brocolli. Yum!
